First Course:

Trio of Baba Ghanoush with Pomegranate seeds and pine nuts, Hummus with

Roasted chickpeas, and Whipped Feta with Red Peppers

Wine: Chateau Saint Cyrgues 2025

Second Course:

Salad of Arugula and Frisee with Roasted Red Grapes, Crispy Prosciutto Lardons, Hazelnuts

and Chevre with a Blood Orange Vinaigrette

A Demitasse of Curried Cauliflower Bisque with Pepitas, Apple, Green Oil and Chiffonade of Basil

Wine: Loimer Lois Gruner Veltliner

Third Course:

Pair of Pistachio Crusted Frenched Lamb Chops on a Bed of Saffron-Scented Almond-Date/Apricot Couscous

Vegan Option: Grilled Portobello Mushroom with a Shallot/Lemon/Lentil stuffing

Served with Charred Broccolini with Lemon, Garlic and Olive Oil

Wine: Tenuta Regaleali Lamuri

Fourth Course:

Basque Cheesecake with Blackberry Cabernet Sauce and Orange Semolina Shortbread Garnish

Vegan Option: Vegan Chocolate Mousse with fresh berries

Wine: Le Grand Noir Cremant de Limoux
